Delicious Cupcake Recipe

I tested out this vanilla cupcake recipe, and it was absolutely delish! I paired it with an orange flavored cream cheese icing! It was so good that I decided to share it with y'all=) Happy baking!

Vanilla cupcakes (serves 12) :

Batter Ingredients-
~ 3 Tablespoons melted butter
~ 3 Tablespoons oil
~ 2/3 cup milk, room temperature
~ 2 eggs, room temperature
~ 1 cup sugar 
~ 2 teaspoons vanilla extract
~ 1/2 teaspoon salt
~ 1 1/4 teaspoon baking powder
~ 1 1/2 cups + 1/8 cups flour

Icing Ingredients-
~ 1 stick (4 oz) of butter
~ 2 packs (8 oz) of cream cheese
~ 2 teaspoons orange flavoring (I used Happy Home Natural Orange Flavoring)
~ 4 cups powdered sugar (I used an entire 2 lb bag to make the icing thicker) 

Directions:
1. Preheat oven to 350.
2. Spray muffin tin or place cupcake liners in the tin.
3. Combine milk, melted butter, oil, eggs, and vanilla in mixer.
4. Add sugar and salt. Mix until combined.
5. Whisk baking powder and flour together. Add to batter.
6. Put batter evenly into muffin tin.
7. Bake for 18 to 24 minutes.

While cupcakes cool down:
1. Place butter in mixer.
2. Add cream cheese and mix until combined.
3. Next, put in the orange flavoring
4. Add one cup of powdered sugar at a time until all 4 are in the mix.

{I piped my icing onto the cupcakes, because I think it looks pretty this way.}

{Store unused icing in refrigerator. Let it come to room temperature and whip in mixer before reusing. My step-dad ate the rest of my icing, so I didn't have any leftovers;) hah}
